CIPROMED’s sensory study takes IFW 2026 by storm!
During IFW 2026 in Turin (9-12 June), a live sensory study, “Beyond the Cookie: Exploring Consumer Acceptance of the Foods of Tomorrow,” took place, and the response was fantastic!
The study investigates consumer perception and product quality of chocolate chip cookies enriched with yellow mealworm (Tenebrio molitor) flour, an alternative and sustainable protein source, combining sensory evaluation with a deeper analytical characterisation of volatile compounds, all within the framework of the CIPROMED project.
Over the course of the conference, dozens of conference attendees, researchers, students, and industry professionals alike stopped by our booth to taste, evaluate, and share their honest opinions.
