The Laboratory of Entomology and Agricultural Zoology (LEAZ) is an autonomous research unit of UTH. Since 2014, LEAZ has started studying intensively the exploitation of insects as a nutrient source, working particularly on the optimisation of the mass-rearing of insects as an ingredient of animal feed.Currently, several strains of Tenebrio molitor, Hermetiaillucens, Alphitobius diaperinus and Zophobas morio are maintained in the facilities of LEAZ. Moreover, LEAZ has successfully participated in several research projects on edible insects. Overall, LEAZ has obtained a prominent position at the national, European and international level, and has attracted funding that exceeds 8,000,000 Euros during the last 10 years, from different sources, including the EU, but also different international organisations, as well as global player companies. The main research topics of the Aquaculture Laboratory (AquaLab) include the replacement of fishmeal and fish oil in the diets of farmed fish by sustainable alternative such as insect meals, microalgae meals/oils, single cell proteins. UNITO is the WP5 leader. “Testing alternative recipes for food products and terrestrial and aquatic feeding”. In this WP, the novel food and feed products with the alternative proteins and their blends produced within the WP3 and WP4 are tested and validated through animal trials and human studies. In particular, UNITO performs digestibility and growth trials with poultry and fish (rainbow trout).

At the end of the trials, the physical and chemical quality of the products (poultry meal and fish fillets) is assessed. UNITO also participates in WP 1, 4, 6 and 7. UNITO has all the needed expertise (innovative research on insect-derived products for feed purposes) and (experimental farm and laboratories) to fully achieve project objectives.

The chair of Marketing for Foods and Agricultural Products at UGOE will carry outconsumer studies related to consumer attitudes and willingness-to-try, -buy, -pay and taste (flavour, palatability) expectations for the developed new food products. Also, sensory tastings with the newly developed products will be carried out.

To account for consumer perceptions towards the new products two focus groups with consumers will be carried out. Additionally, psychological, cognitive and emotional attitude and responses towards new food will be investigated. Foods will be rated in terms of Valence, Palatability, Healthiness, and Wanting, together with a self-report questionnaire collecting information on age, gender, BMI, hunger level (on a 9-point scale), hours from the last meal, dietary habits (e.g., omnivore, vegetarian), dietary restrictions based on medical (e.g., gluten allergies), ethical or religious reasons, and sensory aspects and expectations.
